This is a great salad I like to make inspired by an awesome little restaurant in Barcelona named ‘Bo de B’! They make awesome salad’s and wraps with the freshest ingredients! This one is a great meal packed with protein and nutrients! I like to use a combination of fresh veggies and either use Quinoa and Lentils for the protein, or lean chicken breast!
I usually steam some basmati rice while I’m making the salad ingredients…
Honey Lemon Vinaigrette : (this makes enough for both the salad and the quinoa/lentils)
2 tablespoons honey
2 tablespoon fresh squeezed lemon juice
5 tablespoons olive oil
fresh chopped cilantro & mint to taste
season with salt & pepper
Lentils & Quinoa :
1/2 cup of rinsed green lentils
1/2 cup of rinsed quinoa
2 cups chicken stock
Combine the above ingredients in a pot and simmer for approximately 20 minutes, or until tender, then drain well making sure to remove excess liquid…
then mix with 6 tablespoons (or to taste) of Honey Lemon Vinaigrette, plus 1 teaspoon ground cumin, and a handful of fresh corn kernels (optional) & set aside
Meanwhile, make the Salad :
Coarsely chop a few ribs of romaine lettuce for the base, top with chopped cucumber, baby tomatoes, red pepper, Lebanese black olives and high quality greek feta
Then toss with approx. 3 tablespoons of the Honey Lemon Vinaigrette
*Sub – you can grill some chicken breast if you’d like to omit the lentils & quinoa, and or fresh chopped cabbage can also be added as a 2nd salad with some fresh edamame!
Arrange the salad on serving plates and enjoy! Make great left-overs too!
